Stir fries are a a great way to utilize a variety of vegetables and can be tailored to your individual taste. This recipe uses quinoa as in place of rice which can cause a rapid spike in blood sugar.
1 tablespoon avocado oil
1 # chicken breast, sliced into 1 inch chunks
1 medium red bell pepper, cored, seeded and julienned
2 teaspoons grated ginger
1 clove garlic, sliced
2 cups broccoli florets , blanched
1 ½ cups cooked quinoa
1 egg, beaten
2 scallions, chopped
Soy sauce, sesame oil, chili paste to taste
Sesame seeds, optional
Heat oil in a large skillet over medium-high heat. Add chicken and cook for a few minutes without turning. Add bell pepper, ginger and garlic, Cook, stirring frequently, about 2 minutes. Add broccoli, season with salt and pepper and cook for 1-2 minutes. Add quinoa, along with egg and scallions. Cook, stirring constantly, until egg is evenly distributed, about 2 minutes. Turn heat off and season with soy sauce, sesame oil, chile paste if desired. Divide stir-fry among 4 bowls and garnish with sesame seeds if using.
Optional ingredients include water chestnuts, string beans, bean sprouts,
baby corn, edamame and more.
