A great addition to salads, soups, or even as a side dish. For a sweetened version, add monk fruit sweetener or stevia for a yogurt topping
2 cups cooked quinoa
2 tbsp avocado or olive oil
Salt to taste
INSTRUCTIONS
Preheat the oven to 375°F.
Place the quinoa in a mixing bowl and add the oil. Add some salt to taste and mix well.
Spread the quinoa mixture out on a baking sheet and bake in the oven
for 25-30 minutes, stirring every 10 minutes. Optional seasonings can be added after around 15 minutes
Bake until the quinoa is golden brown and crispy.
Remove from the oven and let cool to room temperature. Store in an airtight container for up to 3 days.
